Recipe:
Santa Fe Cheese Sandwich on Sourdough
Adapted from Sandwiches by Xenia Burgtorf, Silverback Books, 2000
1 tablespoon spicy chili sauce
2 tablespoons sour cream
1 teaspoon lemon juice
A few leaves green leaf lettuce
Leaves from 4 to 6 sprigs of fresh cilantro
½ red onion, thinly sliced in rings
1 small avocado, sliced
4 slices Breadsmith 100% Whole Wheat Sourdough
4 ounces Monterey Jack cheese, sliced
Mix chili sauce, sour cream and lemon juice in a small bowl. Toast the bread until golden. Spread chili sauce on two slices of bread. Layer on the lettuce, cheese and avocado, onion and cilantro. Top sandwiches with remaining bread, slice diagonally and serve immediately.
